It emphasizes his high
ascorbic acid content, value that is even superior
to the one of the citruses; the chili peppers
contains almost 10 times a higher value in vitamin
than the other peppers and, in addition, have higher
pungency, aspect that characterizes them.
In the placenta of chili peppers mainly, glands are
rich in alkaloids (capsacinoids), between which the
capsaicin prevails, that determines the degree of
pungency of the fruit. This "hotness" of the fruit
cultivating and the traditional method to consider
it is the determination of the reciprocal value of
the Maximum dilution that allows to detect pungency
to the pleasure; the result is expressed in Scoville
units (U.S.), in honor of the inventor of the method.
